Welcome...and now for some food!


Amatriciana-My Way

Serves 4
Ingredients:
3 slices bacon, diced
1/3 cup chopped onion
1 teaspoon minced garlic
1 pinch crushed red pepper flakes
1 can stewed tomatoes
1 ¼ cups linguine pasta, uncooked
2 teaspoons chopped fresh basil
1 tablespoon grated Parmesan cheese

Cook the bacon over medium heat until crisp, around 5 minutes. Remove the bacon, and drain most of the fat out of the pan, leaving a tablespoon or so.
Meanwhile, boil a large pot of water and get the linguine cooking as directed. When done, drain.
Add onions to the pan and sauté until starting to soften, then stir in the garlic and red pepper flakes and cook for about 30 seconds.
Add the tomatoes and their juices. Break up the tomatoes with your spatula. Simmer for about 10 minutes.
Stir the basil into the sauce and then add the linguine. Toss.
Serve with Parmesan sprinkled on top.

This is what home cooking is all about. I don’t think comfort food gets any better then a big bowl of noodles, with an easy, slightly spicy sauce. If you do not eat bacon, feel free to leave it out. You can also use turkey, also it doesn’t render down nearly as well as normal bacon.  Also, if you prefer granulated garlic, go ahead and make the proper substitution. And if you love garlic like me, add as much as you want! I am all for making recipes your own.
