Wild Friday Night

So it's Friday night...and it's inching closer to Mike coming home from work, so I start on dinner. I had these grandiose ideas of actually setting the table and sitting down for a civilized meal. Did this actually happen? Keep reading.


Warm Pasta Salad


Serves 2 (with leftovers, yay!)
Ingredients:
1/2 fettuccini 
1/4 cup chopped red onion
1/4 cup sliced black olives
1/2 cup crumbled feta cheese
1/2 cup italian dressing
1 teaspoon dried basil


Start a pot of water boiling for the fettuccini. 
While the water gets going, get all your veggies prepped and throw them in a bowl, along with the feta and basil. If you want to use fresh basil, I'd actually recommend it. However, the heat is pretty much ruining my fresh basil, so dried will have to suffice.
I also realized half-way through that I did not in fact have red onion, so I used white. And it still worked out just fine.
Boil the fettuccini to al dente, then drain and toss in the bowl with the veggies.
Pour the dressing on top of the pasta and mix everything together. 


This is a very simple dinner. But man it hits the spot. I also steamed some broccoli to go with. Yum.


So.....did we end up at a table like grown-ups?
Nope. We ate on the couch. Out of the bowl. With two forks. And it was kind of great.
